What is the best way to apply archive logs from RAC to single instance?

Hi,

We have a RAC cluster on Oracle standard edition 11.2 and moving to new data center and setting up RAC cluster.and it takes long time to move files so to minimize the downtime we are planning to move full database backup and apply the archive log periodically until we are ready to cut-over to new environment. To prototype, We tried RMAN restore full backup and then used "set until time...." and keep specifying different time and Oracle is able to apply required logs and looks fine. We are wondering if this is correct way or there is better way to do full recovery i.e. restore full backup and apply apply individual archive logs or specify sequence or scn number etc....
