Using color picker

For a planning system I want to use colors to visually indicate when someone is present etc. I have created a page which enables me to choose a foreground/background color combination for a specific element. I want to show , using a sample text, how a specific combination displays. This is where the trouble/lack of knowledge starts:
1. where/how do I specify the foreground/background color for an Apex Item?
2. how to implement some dynamic changing of the example item when a different fore-/background color is chosen?

any examples appreciated
