Upgrading VDI 3.2.X Production Server Hardware???

Hello Gurus, we have been using 3 Sun X4100 servers (Dual CPU / DUAL Core 32GB ram) and we have hit the MAX on these servers (have 100 Windows 7 desktops). We LOVE these servers but they are no longer able to perform. I have been looking thru the various documents and I cannot find ANY document that describes HOW to move your VDI environment from one set of servers to another. We are moving from Sun X4100's to the Sun X4600M2 servers with 8 Dual Core CPU's and 64 GB ram talking to the same VMware VCenter backend.

Has anyone done this?

Here are my thoughts:

1. Setup 3 X4600M2 servers, with their new IP's and subnet (totally differnt than the X4100's - BUT using the same names (if possible) ).
2. Install and configure the Primary X4600M2
3. Install and configure the 2nd primary X4600M2
4. Do a mysql dump on the 2nd primary X4100.
5. Import the dump to the 2nd primary X4600M2.
6. Install and configure the 2nd secondary X4600M2
7. Turn off all 3 X4100's.
8. Have dns point to the new servers.

Will this work? This will cause all the desktops to
