Running Vista virtual machine with VMware

I'd like the input for the following. I want to run VMware machine on my desktop (intel quad core E6400, 3gb RAM, SATA HDDs, Vista). I want to put Oracle DB + OBIEE + OBIEE Apps + Informatica server under XP (also maybe try some other OSs).
I want to use it primarily for demos, tweaking, practicing, as well as testing.
How much virtual memory should I allocate for that machine? (2 Gb RAm enough). Performance and stability isn't really an issue - I'm just looking to be able to throw a few demos together.
Is this too much to put on 1 VM?
