Regular expression - to update partial string in a column value

Hi,

Any one help me get solution for my problem. Its:

In a table i have data in a column with delimiter | (pipe symbol). I need to update particular string data in this. For example i have data like below:

big tiger | lion | camel
tiger | camel
crocodile | tiger | giraffe

zebra | Hippo | tiger

I would like to change the value tiger to xyz such that first row should not get affected. all the other three rows should be updated and it can look like below:

big tiger | lion | camel
XYZ | camel
crocodile | XYZ | giraffe

zebra | Hippo | XYZ

what is the best thing that can be done?
