Queries Running Slow due to STALE Oracle Statistics

I have few Questions regarding the Oracle Statistics.
In our Environment in most the of tables will have 20 or 30 records during the Start of the Day process.
As the day progresses the data gets grows upto 1 million or 2 millions.
During the end of day process we gather the stats and truncate the tables.
Now the problem we are facing is some of the Queries works and some queries are not working(Taking 10 to 15 GB of Temp Space for returning 4 records).So if i use the s*qlt* and generate the plans,optimizer tells the statistics are STALE but we cannot gather the Statistics during the production hours.
So how to over come this kind of issues.
