Oracle Linux 7.1 on Hyper-V resize vhdx procedure?

We are looking to setup some test databases servers using Oracle Linux 7.1 UEK.  I see Microsoft indicates that VHDX resize is compatible/supported with UEK.  We would like to end up with 1 VHDX for each VM test server if possible.  I am assuming we will want to use LVM.

Are there any how-to/procedures for VHDX resize with an Oracle Linux guest?   Is there any procedures for RHEL? 

Is using LVM and wanting to end up with 1 VHDX after a resize the wrong goal?
