How to transition users to a different adapter/resource

For one of our mail applications we are moving from Live@EDU to Office365. I have the Live@EDU resource working just fine but will need to create a new resource for Office365. Once the backend migration is done by Microsoft, I'll need to move all the applicable users from the Live@EDU adapter to a new Office365 Adapter and maintain their links and data. One attribute name will change, the rest will stay the same. I have no clue how to do this properly.
The obvious way is to leave the adapter data alone and just attach the new resource actions. This however would leave the names of the resource itself and some data with the old inappropriate values.
Any help, pointers or insight would be greatly appreciated.
We're using OW 8.1.1.8.
