How to monitor a Servers memory and CPU status

I'm over-committed a lot, but everything is running fine due to light loading. When usage goes up, I'll have to get a second server. Besides performance going to crap, how can I monitor RAM and CPU utilization? In the VM Manager panels, I've found a raw percentage for CPU utilization for individual virtual machines and also for the server, but nothing about RAM.

Specifics (OVM 3.0.3+):

CPU Allocated/Available 45/24.
RAM Allocated/Available 46/96.

OK, so I'm not over-committed on RAM yet, but I will be someday and how would I know when the server starts feeling the stress of RAM over commitment?
