How do I disable the auto-update feature of Java Runtime Environment 8u341 Window x64?

I have a user who has to use an OMES (Oklahoma Government) application that will only work with Java runtime environment 8u341 according to their own support techs.

However, this Java installation has the auto-update feature locked, and it subsequently keeps removing itself every time the computer is restarted or turned off and on.

This leads to me having to constantly reinstall it.

Is there a solution for this?
