How do I get the Java Applet plugin for Mac OS X Lion?

Hi, I'm new on here and would welcome some advice about how to access my internet conferencing site now that Apple are no longer supporting the Java Applet plugin. I'm running Mac OS X 10.7.5 Lion and the problem began when I installed the latest OS update on my MacBook Pro. That update included Java v7 which I have now uninstalled. What do I do now?
