Generating random Strings with characters from a character set

I need to generate
a random string consisting of characters other than [a-zA-Z0-9-.]

Also I need to generate random strings with non-ascii characters.i.e Characters not from standard ascii character set

Plz lemme know the logic, or any helpful classes..
