EO definitions and EO instances, need explanation?

Hi! I have question about EO definitions and EO instances.
1. When I create EO I can generate three custom classes. In which case I need to generate these classes? Why it is necessary?
2. If I don't generate any class, then my EO is withoout java class or java class is somewhere hidden?
3. If there is no Java class, then from where EO definition creates EO instances?

Hope You can answer my questions and explain these things.
