Content Paging vs. Fixed Headers: Where to set the default?

When my client creates a new analysis in her installation of OBIEE 11.1.1.7.150120, her default table presentation is 'Content Paging'. 

In my installation of OBIEE 11.1.1.7.140715, my default is 'Fixed Headers'.

I believe the "default" default is 'Fixed Headers' in a plain vanilla installation.

What is the procedure for changing the system default to either 'Content Paging' or 'Fixed Headers'?
