Change parsing schema for APEX REST Service

Hi,

Using APEX 5.1 and ORDS 18.2.

I am new to using REST, all looks great and easy to set up but where on earth can I change the parsing schema please? If I export, this is included in the script and seems to be the first APEX schema provisioned.

I have 60 apps and 50ish schemas so want this to be specific for a schema for different REST calls but this does not appear to be possible from the ORDS setup in APEX?
