Change checkbox color in Universal Theme

Quick question... How do I change the color of a checked checkbox in the Theme Roller?

I would like my app's checkboxes to be simply a black checkmark on a white background - not blue as they appear by default in the Vita theme (see below). I would prefer not to affect any other color selections in the theme. I would also like the selected checkbox's label not to be bold.
